SOURDOUGH 101 CLASSES

In this 3-hour hands-on workshop, you’ll learn the essentials of sourdough: starter care, mixing, stretch-and-folds, shaping, scoring, and baking. You’ll practice each step and head home with the skills (and dough!) to keep baking confidently. Your instructor, Geneve du Plessis, is the baker behind Uprooted Journey, a Rockwall micro bakery specializing in naturally leavened breads. She’s passionate about making sourdough approachable, fun, and something anyone can enjoy baking at home.

Standard tickets include 3hr Class Attendance, Light snacks & refreshments, Take Home class notes & instruction booklet, Sourdough Starter Jar with Active Starter, and jar mixing spatula.

Premium tickets include 3hr Class Attendance, Light snacks & refreshments, Take Home class notes & instruction booklet, Sourdough Starter Jar with Active Starter, and jar mixing spatula, as well as a Baker’s Kit that includes an Apron, Mixing Bowl, Dough Whisk, Banneton Basket and Bread Lame.

In this class you will learn:

  • How to maintain and feed an active sourdough starter

  • The basics of mixing and autolyse

  • Stretch-and-fold techniques for strong, airy dough

  • How to bulk ferment and recognize when dough is ready

  • Shaping loaves: boules and batards

  • Scoring techniques for beautiful oven spring

  • Baking techniques to achieve a crisp crust and tender crumb

  • Tips for troubleshooting common sourdough challenges

All equipment needed will be provided in class. If you have the standard attendance ticket, you will borrow equipment from Uprooted Journey and return your equipment at the end of the day. 

If you have the premium attendance ticket, you may keep the equipment in your bakers kit.

This workshop is designed for adults and older teens (ages 13+). Younger bakers are welcome if accompanied by a paying adult, but please keep in mind that some techniques involve hot equipment and sharp tools.

Light snacks and refreshments will be provided, but you’re welcome to bring your own non-alcoholic beverages. At this time, we kindly ask that you do not bring alcohol to the workshop.

Workshops are intentionally kept small, with a maximum of 10 participants. This allows for a relaxed atmosphere and plenty of one-on-one guidance throughout the class.

Yes! Uprooted Journey is a home-based micro bakery, and workshops are hosted right from my kitchen. It’s the perfect cozy setting to learn sourdough in a real home environment, just like you’ll be baking in your own kitchen.

Comfortable clothing you don’t mind getting a little flour on. Aprons will be provided.
